Fogo de Chão

Yes, Fogo de Chão is where you go to indulge in perfectly-prepared meat, but their enormous salad bar is a veggie-lover's dream come true. Service here is downright festive as you choose from choice cuts of meat carved off of long skewers by knife-wielding gauchos. Save room for dessert, and try their chocolate mousse cake or papaya cream. Remember, it's a marathon, not a sprint. Don't fill up on the heavenly cheese bread!

This restaurant focuses on pork and the innovative use of the whole animal. For farm-to-table folks, this is something of a siren's song. Think housemade charcuterie, sausages, and bacon ... lots of lovely bacon. It's not all about the meat here, though -- there are options for every taste, including vegetarians.
