Roasted Brussels Sprouts on the Stalk Recipe:

Ingredients:

  • 1 stalk of brussels sprouts (approximately 18 to 24 inches long)
  • 1/4 cup olive oil (not extra virgin)
  • Salt, black pepper, and garlic powder to taste

Method:

Preheat your oven to 400 degrees. Carefully rinse and pat dry your stalk of sprouts. Trim off any loose leaves or blemished spots. Avoid cutting off whole sprouts if you can; the beauty is in the presentation with this recipe.

Using a basting brush or an oil sprayer, coat the entire stalk with olive oil and sprinkle on salt, freshly ground black pepper, and garlic powder. Set it on a cookie sheet lined with foil and roast for 30 to 40 minutes (depending on the size of the sprouts) until the outer leaves appear brown and somewhat charred. Serve whole with a paring knife and dipping sauces.

Variations:

  • While you can use ground pepper, freshly cracked black pepper gives the dish a nice, rustic appearance. Try sprinkling on some flaky sea salt just before serving as well.
  • Have a variety of dipping options on hand: Caesar dressing, garlic aioli, or a simple balsamic vinaigrette would be great. 
  • If you have to trim the stalk to fit your cookie sheet, cut the bottom part and halve the larger sprouts. Roast them, cut side down, alongside the whole stalk.
  • Because you're roasting at a high heat, use "regular" olive oil or vegetable oil in this recipe.
