This potluck staple is the perfect savory side dish to serve at any meal.

Disclaimer: this is not a recipe for the healthy kind of brown rice with the bran still attached to each grain. This is an unapologetically decadent rice casserole, gussied up with French onion soup and more butter than you'd care to admit.

With only four ingredients, it's a simple dump recipe that you can throw together in just minutes. If it seems familiar, it is also known as "Stick of Butter Rice" but you shouldn't get too caught up in the calorie count. There are ways around it!

Ingredients (serves 4-6)

  • 1 cup uncooked long-grain rice
  • 1 10-ounce can of condensed beef broth
  • 1 10-ounce can of condensed French onion soup
  • 8 T. unsalted butter

Method

Preheat your oven to 425 degrees. In a round or square baking dish, add the uncooked rice and spread it evenly. Carefully pour the two cans of soup into the dish and top with slices of the unsalted butter. Cover with foil and bake for 30 minutes.

Remove the foil and continue to bake for another 30 minutes. At this point, your kitchen will smell amazing! Let the dish rest a bit before serving, and make sure you get some of the crispy edges.

Variations

Clearly, you can veer off from the original recipe and lighten this dish up. What I like to do is use about 5 tablespoons of butter instead of the full stick. You still get the richness with about half of the guilt. You can use reduced sodium version of the soups if you can find them, or replace some of the condensed beef broth with water.

If you really want to get fancy, you could add a handful of sliced mushrooms, but I personally don't add anything extra.

At our annual potlucks, this dish is always one of the most popular, and my colleague who makes it is pretty much forbidden from bringing anything else. Yes, it's THAT good.
