Chocolate-Covered Strawberries Recipe:

Ingredients (makes 6):

  • 1 cup of chocolate chips (I used milk chocolate)
  • 6 large strawberries, carefully washed and dried
  • sprinkles or colored sugar (optional)
  • additional chocolate chips for drizzling (optional)

Method:

  • Melt your chocolate in a bowl by microwaving it for 30 seconds at a time, stirring well until completely melted and smooth. Grip each strawberry at the top by the greenery and gradually cover it by dipping and rotating in the chocolate. Lift your coated berry and place it on a silicone mat or parchment paper, making sure to let the chocolate drip down first, then setting the berry on top.
  • If you're going to do a decorative drizzle (highly recommended to hide any wonky spots), use your leftover chocolate or a contrasting type like white or dark chocolate. Once melted, spoon the chocolate into a plastic sandwich bag and snip the tip to drizzle it on. Add your sprinkles or colored sugar when the chocolate is still warm.
  • These will be very delicate, so serve them right away once completely cooled. The green top of the strawberry will dry out pretty quickly, so don't make these too far in advance. If you have any leftovers, store them in an airtight container in the refrigerator, separated by cupcake liners.

Variations:

  • Working with melted chocolate can be tricky. Practice with some pretzel sticks or marshmallows until you're comfortable with the process and the viscosity of coating.
  • Buy the absolute best strawberries you can find. For this recipe, bigger is definitely better! Long-stemmed berries are ideal for this if you can find them.
  • This is a very basic method that doesn't require tempering the chocolate, so don't expect a shiny coating. If you want to really bling it up, get some edible glitter or sugar pearls.
  • One of the prettiest arrangements I ever saw was a mix of fresh and chocolate-covered strawberries. Simply put the strawberries on bamboo skewers and arrange them at various heights in a vase. Fill out with some baby's breath and greenery for a stunning display. Don't forget to line the vase with some tissue paper if you're using clear glass.
  • Condensation is your biggest enemy. Let these cool at room temperature if you can so you don't get water spots on the chocolate. Don't try to move them for at least an hour to ensure the chocolate is firmly set.

Coating things in chocolate is one of the easiest kitchen crafts you can tackle. Add some big, beautiful strawberries to the mix and you've got an elegant gift that will make a big impression.
